Easy Chocolate Covered Peanut Butter Stuffed Dates with Sea Salt

Ingredients
  

  • 20 Medjool dates pitted
  • 1/2 c Peanut butter
  • 1/2 c Semi-sweet chocolate chips
  • 1 tsp Coconut oil
  • Flaky sea salt (optional)

Instructions
 

  • Line a baking sheet with parchment paper. If your dates did not come pitted, cut one side of each date lengthwise and remove the pit, careful to not cut all the way through (so there is a channel to stuff). Line the baking sheet with your pitted dates.
  • Fill each date with about 1/2 tsp to 1 tsp of peanut butter using a knife or spoon, depending on the side of the date and your preferences.
  • Add chocolate chips and coconut oil to a microwavable dish. Microwave in 30 second increments until melted. Stir chocolate until smooth.
  • Dip dates halfway in the melted chocolate. You can also fully coat your date in chocolate if you prefer more chocolate or simply drizzle a bit overtop if you prefer less! Sprinkle dates with sea salt as you go, before chocolate starts to set.
  • Pop the baking sheet into the refrigerator for 30 minutes, or until the chocolate has hardened.

Notes

Storage
These chocolate covered peanut butter stuffed dates will keep in the fridge in a sealed container for about two weeks or in the freezer for around a year! Once the chocolate is set, these stack well in Tupperware so are super easy to store.
