My friends and family have come to the consensus that these taste a lot like a Reese’s peanut butter cup, if not better! The date gives such a nice texture and sweetness that is balanced by the nutty peanut butter and flaky sea salt – these are really to die for. And what’s not to love about adding some nutrients and antioxidants (from the dates) into your sugar fix?

The best part? They come together in about 20 minutes (or less if you buy pitted dates)!

What You Need to Make Chocolate Covered Peanut Butter Stuffed Dates

  • Medjool dates, pitted
  • Peanut butter
  • Semi-sweet chocolate chips
  • Coconut oil 
  • Flaky sea salt (optional)

I get both my dates and my peanut butter at Costco. I promise once you try this recipe you’ll want to have a Costco-sized pack of dates on hand to make more 😏

For the peanut butter, I personally love any peanut butter that only has peanuts and sea salt in its ingredient list. I find that natural peanut butters with fewer ingredients actually give these stuffed dates more of a peanut butter cup candy like texture due to their thicker texture. However, you can use whatever peanut butter you prefer or have on hand!

Feel free to play around with different chocolates – dark chocolate would be delicious here as well!

The coconut oil is mixed with the chocolate chips to create a really silky texture for our dipping chocolate, and also to help make sure the chocolate doesn’t burn in the microwave. However, if you don’t have coconut oil on hand, you can swap it out with any other neutral flavored oil.

The flaky sea salt is an optional topping to add after dipping the dates in chocolate. I find that it adds the perfect balance to the sweetness (think salted caramels), but feel free to leave off if you’d prefer!

How to Make Chocolate Covered Peanut Butter Stuffed Dates

Now the fun part – making the dates! I promise it’s super simple.

Step 1: Prep Your Workspace

You’ll want to start by lining a baking sheet with parchment paper, which will be your landing spot for the dates. 

I then just lay my dates right out on the baking sheet and do the rest there. However, if your dates did not come pitted and you prefer to use a cutting board for step two below, you can transfer your dates to the baking sheet once they’ve been pitted.

Step 2: Pit Your Dates

Skip to Step 3 if your dates came pitted! Otherwise, take a knife (I just use a butter knife) and lightly cut into one side of the date, being careful not to cut all the way through so there is a channel to stuff.

Once the pits are removed, line the dates on your baking sheet with enough space around them to be able to pick them up and set them down easily without bumping into each other.

Step 3: Fill Dates with Peanut Butter!

This is where things may get a little sticky – haha. I pick up each date one by one and add about a half teaspoon to a teaspoon of peanut butter.

I find that the size of the dates vary quite a bit, so I’ll adjust the amount of peanut butter inside to get the right date to peanut butter ratio for me – this is totally up to your preferences!

Step 4: Melt the Chocolate

Add the chocolate chips and coconut oil to a microwavable dish and heat in the microwave in 30 second increments until fully melted. I find it takes about a minute to a minute and a half to get the chips fully melted in my microwave. Once it’s melted, stir your chocolate until it’s nice and smooth.

Feel free to melt your chocolate on the stovetop as well if you prefer!

Step 5: Cover the Dates with Chocolate (and Sea Salt!)

There are a few ways you can go about this based on your preferences. I personally like to cover half of the dates in chocolate, because a full dip is a bit overwhelming to me. But if you’re a huge chocolate lover and want to dunk each date all the way in your melted chocolate, I fully support that decision!!

If you want only half of your date covered in chocolate, as pictured above, you can just dunk the date halfway in the chocolate. I struggle to easily dip the date when using certain Pyrex measuring cups for melting my chocolate because they are too narrow and deep. In this case, I’ll scoop some chocolate onto a soup spoon, set the date in that and rotate to cover half of the date.

If you want even less of a chocolate coating, you could definitely just drizzle a bit of chocolate  on top each date to your taste.

As you’re covering the dates in chocolate, sprinkle each date with sea salt before the chocolate starts to harden. I typically dip four at a time, then salt those four and so on. I’ve found that using a sea salt with an adjustable grind top works really well for controlling (1) the mess of moving back and forth between working with melted chocolate and salt, (2) how coarse my sea salt is and, (3) the amount of salt on each date to fit my liking!

Step 6: Refrigerate and Enjoy!

Once all of your dates are covered in chocolate, pop your baking sheet in the fridge for about 30 minutes to allow the chocolate to harden. 

After this, your chocolate covered peanut butter stuffed dates are ready to enjoy – lucky you!!

Storage

These chocolate covered peanut butter stuffed dates will keep in the fridge in a sealed container for about two weeks. They can also be stored in the fridge for around a year. Once the chocolate is set, these stack well in Tupperware containers so they are super easy to keep in the fridge or freezer. That’s why I recommend you make a big batch so you always have a sweet treat on hand!

Ingredients
  

  • 20 Medjool dates pitted
  • 1/2 c Peanut butter
  • 1/2 c Semi-sweet chocolate chips
  • 1 tsp Coconut oil
  • Flaky sea salt (optional)

Instructions
 

  • Line a baking sheet with parchment paper. If your dates did not come pitted, cut one side of each date lengthwise and remove the pit, careful to not cut all the way through (so there is a channel to stuff). Line the baking sheet with your pitted dates.
  • Fill each date with about 1/2 tsp to 1 tsp of peanut butter using a knife or spoon, depending on the side of the date and your preferences.
  • Add chocolate chips and coconut oil to a microwavable dish. Microwave in 30 second increments until melted. Stir chocolate until smooth.
  • Dip dates halfway in the melted chocolate. You can also fully coat your date in chocolate if you prefer more chocolate or simply drizzle a bit overtop if you prefer less! Sprinkle dates with sea salt as you go, before chocolate starts to set.
  • Pop the baking sheet into the refrigerator for 30 minutes, or until the chocolate has hardened.
